Varsha Kripalani is a food scientist and clinical nutritionist with 5+ years of experience at the intersection of nutrition consultation, food innovation, product development, and market research. She graduated in 2025 with a Master’s in Business and Science (MBS) in Applied Food Science & Technology from Rutgers University and also holds a Master’s degree in Specialized Dietetics (Diabetes and Cardiac Nutrition) from S.N.D.T. Women’s University, Mumbai, India. She is also a Certified Diabetes Education, FSPCA Preventive Controls Qualified Individual and Lifestyle Coach.
Varsha has worked with companies such as Allen Flavors, DSM-Firmenich, and Sevillian Laboratories, where she gained experience in beverage formulation, flavor development, scientific market research, and product testing. Her work has included developing benchtop beverage prototypes, conducting sensory and analytical testing, and researching emerging ingredient and flavor trends to translate scientific insights into market-ready products.
Beyond the lab, Varsha has applied her skills in marketing, brand building, and content creation by designing promotional campaigns, managing program communications, and leading product development projects at Rutgers University. Her work connects food science with business strategy and reflects her passion for innovation, food, and storytelling whether through creating market-ready food and beverage solutions, crafting engaging content, or expressing creativity through writing and photography.
As an Advisor for the Rutgers MBS Externship Exchange Program, Varsha mentors student teams working on real-world projects in food science, product development, and business innovation. She guides students on research strategy, project development, and professional communication, helping them apply interdisciplinary skills to solve real industry challenges. She is passionate about bridging science, business, and consumer experience to drive innovation in the food and beverage industry.
